- Chill the cashews for 20 minutes, then grind them in short pulses to a fine powder. Do not release the oil.
- Heat sugar and water until the syrup becomes lightly sticky between two fingers.
- Lower the heat and add cashew powder gradually while stirring.
- Cook until the mixture forms one soft mass and leaves the pan.
- Transfer to a surface greased with ghee. Cool until safe to handle.
- Knead gently, place between two sheets of baking paper, and roll evenly.
- Cut into 16 diamonds and cool completely..
