- Drain the chana dal. Keep 2 tablespoons whole and grind the remaining dal to a coarse paste.
- Mix the paste and whole dal with onion, curry leaves, flours, spices, melted ghee, and salt.
- Keep the mixture aside for 180 minutes so the flavours settle.
- Heat the oil in a deep kadai over medium heat. The oil should be hot but not smoking.
- Shape the mixture into small flat vadas and slide them carefully into the hot oil.
- Fry until crisp and evenly golden. Remove with a slotted spoon and drain the extra oil.
- Serve immediately with green chutney or tomato chutney..
