- Rinse or prepare the rice and drain it well
- Heat the ghee in a heavy saucepan and cook the rice for 2 minutes
- Add the milk and bring it to a gentle boil, stirring so it does not catch at the bottom
- Cook the rice in water until soft. Add thin coconut milk and simmer for 5 minutes
- Add the sweetener and cook for 5 more minutes. Keep stirring after the sweetener is added
- Add cardamom, saffron, and nuts. Switch off the heat
- Lower the heat, add strained jaggery, then thick coconut milk. Warm gently without boiling and serve in four bowls.
