- Cook the sprouted moth beans with 3 cups water, turmeric, and a little salt until tender but not mushy.
- Heat 3 tablespoons ghee. Cook onion until deep golden, then add ginger-garlic paste.
- Add tomatoes, goda masala, chilli powder, and salt. Cook until thick and aromatic.
- Add the cooked sprouts and hot water. Simmer for 15 minutes so a flavourful tarri forms on top.
- Taste and adjust the salt and spice. Keep the usal hot.
- Toast the split multigrain pav with ghee on a tawa.
- Place usal in four bowls. Top with farsan, onion, coriander, and lemon.
