- Pressure-cook potatoes, cauliflower, peas, and carrots with 1 cup water until very soft.
- Heat 3 tablespoons ghee on a wide tawa or pan. Cook onion and bell pepper until soft.
- Add tomatoes, pav bhaji masala, chilli powder, and salt. Cook until thick and glossy.
- Add the cooked vegetables and their liquid. Mash thoroughly while cooking.
- Add hot water as needed and simmer until the bhaji is thick, orange-red, and partly mashed.
- Add lemon juice and coriander. Taste and adjust the seasoning.
- Split the multigrain pav and toast in ghee on the hot pan.
