  1. Grease a wide heavy pan lightly with ghee and add the milk.
  2. Simmer until the milk reduces by about one-third. Add sugar, cardamom, and saffron.
  3. Cool the reduced milk completely.
  4. Fold in the thick mango pulp and pistachios. Do not cook after adding mango.
  5. Pour into four large or eight small kulfi moulds.
  6. Freeze for at least 8 hours.
  7. Unmould and serve cold..
