- Mix the chicken with yogurt, ginger-garlic paste, turmeric, chilli, and salt. Rest for 1 hour.
- Cook the marinated chicken in 1 tablespoon ghee until lightly charred and nearly done. Remove it.
- Cook onion, tomatoes, cashews, and spices with the remaining ghee until soft. Cool slightly and blend smooth.
- Return the gravy to the pan and cook until glossy. Add hot water and the chicken.
- Cover and simmer for 8 minutes until the chicken is fully cooked.
- Stir in cream, garam masala, and crushed kasuri methi. Keep the heat low.
- Finish with 1 teaspoon ghee and serve hot..
