- Grease a wide heavy pan lightly with ghee and add the milk.
- Simmer until the milk reduces by about one-third. Add sugar, cardamom, and saffron.
- Cool the reduced milk completely.
- Fold in the thick mango pulp and pistachios. Do not cook after adding mango.
- Pour into four large or eight small kulfi moulds.
- Freeze for at least 8 hours.
- Unmould and serve cold..
