- Rinse the soaked chana dal and cut the bottle gourd into equal cubes.
- Heat the ghee in a heavy pan over medium heat. Add the whole spice and let it become aromatic.
- Add the onion and cook until soft and light golden. Add ginger-garlic paste and cook for 1 minute.
- Add tomatoes, coriander powder, turmeric, chilli powder, and salt. Cook until the tomatoes become soft and the ghee begins to separate.
- Add the dal, bottle gourd, jaggery, and hot water to the cooked masala.
- Cover and cook until the dal is soft and the bottle gourd is tender. Add lemon juice at the end.
- Add garam masala and coriander. Rest for 5 minutes, then serve hot..
