  1. Blanch the spinach for 2 minutes, cool it in cold water, and blend it to a smooth puree.
  2. Heat the ghee in a heavy pan over medium heat. Add the whole spice and let it become aromatic.
  3. Add the onion and cook until soft and light golden. Add ginger-garlic paste and cook for 1 minute.
  4. Add tomatoes, coriander powder, turmeric, chilli powder, and salt. Cook until the tomatoes become soft and the ghee begins to separate.
  5. Add the spinach puree and water to the cooked masala. Simmer gently for 5 minutes, then add the paneer cubes.
  6. Cook for only 4 more minutes so the paneer stays soft and the spinach keeps its colour.
  7. Add garam masala and 1 teaspoon ghee. Mix gently and serve hot..
