- Add the flours, spices, melted ghee, salt, and enough water to make a thick coating batter.
- Keep the mixture aside for 10 minutes so the flavours settle.
- Heat the oil in a deep kadai over medium heat. The oil should be hot but not smoking.
- Drop or place small portions of the coated chopped spinach into the oil without crowding the kadai.
- Fry until crisp and evenly golden. Remove with a slotted spoon and drain the extra oil.
