Malai Kulfi is a dense Indian frozen milk dessert with cardamom, saffron, nuts, and a gentle ghee aroma. This homemade version is prepared for four servings and uses familiar Indian ingredients. The method is simple. Cook patiently and watch the colour, aroma, and texture as the dish comes together. A small amount of ghee is used where it improves the aroma or prevents sticking. Serve one large kulfi or two small kulfis per person. Making this recipe at home is a pleasant experience, especially when the fresh aroma fills the kitchen.
