- Heat 2 tablespoons ghee in a heavy kadai and cook the grated carrots for 5 minutes
- Add the milk and bring to a gentle boil
- Cook on medium-low heat, stirring often, until the milk is almost fully absorbed
- Add the sweetener and cook until the released moisture reduces
- Add the remaining ghee and cardamom. Cook until the halwa looks glossy and leaves the sides of the pan
- Add the nuts and cook for 1 minute
- Rest for 5 minutes and serve warm in four bowls.
