- Clean and prepare the fish. Pat it dry and keep it ready.
- Heat the ghee in a heavy pot. Add the whole spices and cook for a few seconds until aromatic.
- Add the onions and cook over medium heat until deep golden. Add ginger-garlic paste and cook for 1 minute.
- Add the tomatoes, ground spices, and salt. Cook until the tomatoes soften and the ghee begins to separate.
- Add coconut milk, tamarind, Goan curry masala, and water to the cooked tomato base. Bring to a gentle simmer.
- Slide in the fish pieces and cook without vigorous stirring for 8 to 10 minutes until just done.
- Add garam masala only if desired, finish with coriander, and rest for 10 minutes before serving..
