- Rinse the rice, soak for 20 minutes, and drain.
- Heat half the ghee in a heavy pot. Fry the onions until golden and remove half.
- Add whole spices, vegetables, biryani masala, yogurt, and salt. Cook for 8 minutes.
- Boil the rice separately until 70 percent done and drain.
- Layer the rice over the vegetables. Add fried onion, mint, coriander, saffron milk, and remaining ghee.
- Cover tightly and cook on very low heat for 18 minutes.
