  1. Rinse the rice, soak for 20 minutes, and drain.
  2. Heat half the ghee in a heavy pot. Fry the onions until golden and remove half.
  3. Add whole spices, vegetables, biryani masala, yogurt, and salt. Cook for 8 minutes.
  4. Boil the rice separately until 70 percent done and drain.
  5. Layer the rice over the vegetables. Add fried onion, mint, coriander, saffron milk, and remaining ghee.
  6. Cover tightly and cook on very low heat for 18 minutes.
  7. Rest for 10 minutes, mix gently from the sides, and serve with raita..
