- Rub 1/2 cup ghee into the multigrain flour until it resembles coarse crumbs.
- Add water gradually and knead a firm dough. Cover and rest for 30 minutes.
- Cook khoya on low heat for 5 minutes. Cool, then mix with coconut, powdered sugar, nuts, and cardamom.
- Divide the dough into 16 balls and roll each into a small circle.
- Place filling on one half, moisten the edge, fold, and seal firmly. Crimp the edge.
- Fry the gujiyas slowly in medium-hot ghee until crisp and golden.
