- Blanch the spinach for 2 minutes, cool it in cold water, and blend it to a smooth puree.
- Heat the ghee in a heavy pan over medium heat. Add the whole spice and let it become aromatic.
- Add the onion and cook until soft and light golden. Add ginger-garlic paste and cook for 1 minute.
- Add tomatoes, coriander powder, turmeric, chilli powder, and salt. Cook until the tomatoes become soft and the ghee begins to separate.
- Add the spinach puree and water to the cooked masala. Simmer gently for 5 minutes, then add the paneer cubes.
- Cook for only 4 more minutes so the paneer stays soft and the spinach keeps its colour.
- Add garam masala and 1 teaspoon ghee. Mix gently and serve hot..
