Ingredients:
1 1/2cups toor dal
6cups water
4cups mixed drumstick
pumpkin
carrot
okra
and shallots
1medium tomato chopped
1/2teaspoon turmeric powder
1teaspoon salt
2tablespoons ghee
1 teaspoon mustard seeds and 1/2teaspoon fenugreek seeds
1tablespoon ginger-garlic
10 curry leaves and 2dried red chillies
3 tablespoons sambar powder and 2tablespoons tamarind pulp
Instructions

Rinse the toor dal well and soak it if required.

Cook the toor dal with 3 cups water, tomato, turmeric, and salt until soft. Mash lightly. In another pot, cook the vegetables with the remaining water, sambar powder, and tamarind.

Whisk or mash lightly so the dal becomes even but still has a little texture.

Heat the ghee in a small pan. Add the tempering spices and let them crackle.

Add ginger-garlic and the extra tempering ingredients. Cook until aromatic without burning.

Pour the hot tempering over the dal and mix well.

Add the mashed dal to the vegetables, simmer for 8 minutes, pour over the ghee tempering, and finish with coriander..
