- Knead multigrain flour, salt, ghee, and warm water into a soft dough. Cover and rest for 30 minutes.
- Mix potato with chillies, cumin, amchur, garam masala, coriander, and salt. Divide into 8 portions.
- Divide the dough into 8 balls. Roll one ball slightly, place the filling in the centre, and seal well.
- Dust lightly and roll into a medium-thick paratha without pressing too hard.
- Cook on a hot tawa until small bubbles appear. Turn and spread a little ghee.
- Cook both sides until golden spots appear and the centre is cooked.
- Serve hot with plain yogurt and pickle..
